I'd love to be able to create a task directly from my Gmail inbox, rather than copying & pasting the url for the email, or having to flip between gmail and Sunsama. Like the way that I can quickly create a task from a Slack message.

Have you tried the email forwarding feature. It is the best way to achieve what you are looking for.
